Answer: Elizabeth Miles. Elizabeth is a graduate of the Culinary Institute of America in Hyde Park, NY. She has worked as both a pastry chef and private chef in Boston and Cape Cod. Elizabeth started cutting grains and gluten out of her diet 5 years ago and was astounded by the health benefits and weight loss. Answer: We make simply decorated birthday cakes and often have them on hand. A few hours notice is appreciated for decorative cakes. An elaborate cake such as a wedding cake or your child’s favorite cartoon character we can also do, but our specialty cake team needs advance notice. Please call to discuss.
Answer: Yes, all of our celebration cakes and cupcakes can be decorated.
Answer: You may refrigerate, our products are made with almond flour and coconut flour. So they stay moist for up to a week. Items that are dairy free can be left at room temperature without a problem.
Answer: Most of our products are dairy free. It’s easier to tell you what does have dairy because it’s a much smaller list: Cheddar sea salt crackers, double chocolate cookies (and mix), triple chocolate cookie (and mix), white chocolate icing, cream cheese icing. When you come into our store and peer into our pastry case we often say “If it’s white, it has dairy”. We use grass fed dairy when possible. Items that are nut free, made with coconut flour (which is actually a fruit): pumpkin muffins, blueberry muffins, chocolate cupcakes, vanilla cupcakes, double chocolate cupcakes, and our chocolate and vanilla celebration cakes. For those with egg allergies: Our granola, cookies, and vegan chocolate or vanilla cupcakes are egg/gluten/dairy and nut free.
Answer: All of our products are free of refined sugars. Everything is sweetened with organic honey or dates. There is evaporated cane juice in our Enjoy Life Chocolate (which is a well known chocolate for being allergen free) and there is sugar and soy lecithin that comes in the white chocolate we purchase.
Answer: We use soy lecithin in our white chocolate (that’s only 4 products). We are a peanut free and GMO free facility.
Answer: Gluten is a grouping of proteins that exist in the endosperm of certain seeds and flowering plants. Grass seed gluten, such as in wheat, spelt, rye, and barley, tends to be the primary source of food sensitivities. While only 8% of the population is suspected of having the worst form of immune reaction to gluten, known as Celiac Disease, many more feel they benefit from limiting their exposure.
Gluten has little effect on flavor, but a big effect on texture. When breads rise, gluten (“glue” in Latin) allows the bread to stretch and rise, so crafting gluten-free pastries can be a challenge! At White Lion Baking Company, we’ve worked hard to create a product so amazing you’ll be left wondering if it’s actually gluten-free. We do not sell anything unless it could easily pass a taste test next to products with gluten and win on both flavor and texture.
Answer: We create our own blends of flours for each product we make. These blends include almond, coconut, cashew, and tapioca. We do not use any bean flours or grain flours.
Answer: No, we are not a vegan facility. We do offer a small handful of vegan options (if you’re a vegan that eats organic honey), such as grain free granola, dark chocolate walnut cookies, tropical cookies, cranberry walnut cookies, raisin and spice cookies, and egg free chocolate or vanilla cupcakes.

Answer: Yes, in addition to beautiful tiered wedding cakes, we offer deconstructed wedding cakes, dessert tables and cupcake tree displays. We work closely with each couple and offer a dynamic selection of options they can mix and match to create the perfect look for a stunning and delicious dessert spread.
Answer: For same day orders, call us. DO NOT send your order by email. Unfortunately, emailed orders will not be honored. If you wish to order online, during the checkout process you may provide a note of when you would like your order fulfilled (for celebration cakes and local pickup orders).
Answer: We recommend that you call the bakery to place your order at least 48 hours in advance. We can usually accommodate most orders in less time, however; the more notice you give us the more likely we will be able to fulfill your order.
