About Us

Baker and owner Elizabeth Miles has spent her career in the culinary arts and the last decade specializing in gluten- and grain-free baking and cooking. After graduating from the Culinary Institute of America, she honed her skills at two iconic Boston area eateries: Upstairs at the Pudding and Lumiere. She later shifted into a private chef role to balance her family responsibilities.

Liz’s passion for baking and cooking combined with a deeper discovery of the benefits of healthier dietary choices led her to purchase White Lion Baking Company in 2012. Over the last decade, her dedication, creativity, and business savvy have turned the budding brand into a household name with a certified gluten- and grain-free bakehouse in Mashpee, MA, a retail bakery in Newton, MA and wholesale partners from Whole Foods Market (North Atlantic Region) to lots of independent coffee shops and natural foods stores.
